This holiday season, the Boyd team is embracing the spirit of giving. Are you in need of a delicious dish to mix up your holiday gatherings? Read on for some prized family recipes, shared by members of our team!

Sue’s Spinach Balls
2 packages frozen chopped spinach – cooked well and drained
1 package Pepperidge Farm stuffing mix – 2 cups
2 onions chopped fine or ½ cup minced onion
4 beaten eggs
¾ cup melted butter
½ cup parmesan cheese
½ tsp garlic powder
1 tsp black pepper
½ tsp thyme
½ tsp salt
Mix all ingredients together. Put in refrigerator for an hour or so to cool off and firm up the mixture. Make into balls. Bake at 350 for 20-25 minutes. Spinach balls freeze well to bake at a later time.

Coreen’s Corn Casserole
1 large bag of frozen corn (or 2 small bags)
1 can of cream of celery soup
2 cups shredded cheddar cheese
1 cup sour cream
1 sleeve of town house crackers
1 stick of butter
1 small onion, diced
Mix all ingredients except crackers and butter in a casserole dish. Crush crackers in a sealed bag and sprinkle on top. Melt the butter and drizzle it over the crackers. Bake at 350 for 45 minutes. Serves 8-10!

Joanna’s Pumpkin Bread
4 eggs
3 cups of sugar
1 can of pumpkin (15 ounces)
3 + 1/2 cups of flour
1 teaspoon each of cinnamon, ginger, nutmeg, cloves
3 teaspoons of baking soda
1 cup of water
1 cup of oil
1 cup of salt
Mix to combine. Bake at 325 for 1 hour.
